14.2.2 Taste Balance
Judges will evaluate the espresso based on how well the taste components (sweet, acidic, bitter) fit together and complement each other. Reference scales provided on scoresheets are solely for judge’s initial impressions of intensity; equal intensity does not imply harmonious balance.
